Jambalaya in the slow cooker

This was a team effort but well worth it. I am a full time employee so the slow cooker is used often in our household. Soccer, tutors, daycare, school, etc does not leave much time home cooked dinners during the week and I strongly believe that you should have at least 1 meal a day that everyone gets together. Breakfast (minus dad) and dinner (we all make that one) is it. This jambalaya is so good, not spicy, and healthy.

Ingredients:
1.5 lbs chicken (boneless skinless)
1 lbs smoked sausage (fat free)
1 large green pepper
2 8oz can of crushed tomatoes (while can juice and all)
2 tbsp of fresh garlic (mashed)
1 cup chicken broth
1 tbsp Creole spice mix
1 tsp thyme
1 tsp ground oregano
1 lb. large shrimp (peeled and deveined)
2 cup brown rice

Direction: mix all except the last two ingredients together into crock pot. Cook on low for 4 hours. Add shrimp and rice after the 4 hours and cook on high for 1 hour. Mix half way through the hour so rice does not stick to crock pot. Enjoy!

Family nap

After a fun filled night of 9 year old sleepover and having a 1year old. I made the decision that my family needed a family nap. But all the neighbor kids always come over to play with my boys so I did this to the door bell.

Mixed veggie and ham au gratin

Tonight I made a quick and easy dinner that anyone can do. All you need is an oven, baking dish, ham, bag of frozen mixed veggies, 2 boxes of cheesy broccoli, ham, and pilsberry crescent rolls.

1. Preheat your oven to 400 degrees
2. Cut up your ham (2-3 cups worth)
3. Mix ham, cheesy broccoli, bag of mixed veggies together and put in baking dish.
4. Cut crescent rolls into cubes and place on top of ham mixture.
5. Bake at 400 for 20 minutes and enjoy!

My sons class his celebrating Dr. Seuss all week for his birthday week. For a treat for the class we made green eggs and ham cookies. Super easy, white chocolate, m&m, and pretzels.

Easy fruit parfait your kids will gobble up

You want a quick and healthy breakfast that you can make within minutes? Try this....

1. Dannon Natural Vanilla Yogurt
2. Fresh or frozen (but thawed out) fruit
3. Kellogg's frosted flakes (crushed)

You can make this a head of time for the kids or have the kids make them themselves. You can layer it and add as much ingredients to your taste. If your like me and like a little more vanilla taste add a small drop of vanilla extract to the yogurt. Enjoy!

Apple iPhone 4

So my Black Berry crashed. Literally broke so I went to Verizon Wireless today. They were not able to help me so I had to get a new phone. I broke down and spent $100 for the iPhone.  I am pleasantly pleased except I am not a fan of how you end calls. You have to actually have to hit end each time opposed to just hitting the back button. I have not ended calls a few times because of that. :)
