Day 3

I have only lasted two days. Lol! Not really but I am not looking forward to day 3 lunch. It's pasta bake, cottage cheese, and zucchini. Booh!

2012 Summer Bucket List

School will be ending soon and that means the kids will have so much energy. I made a bucket list that we can do fun things through out the whole entire summer. I'm going to get it laminated today at Office Max so that we can keep it nice and clean.

Day 2 lunch challenge

My first lunch was pretty handy. I do have to say though, I didn't feel like I got enough to eat but I know that was just mental because I was full. I am so use to gorging my self full with junk. It was just the right amount. I was putting the kids to bed and thought I would be proactive and make my lunch tonight for tomorrow. So I did and after my husband saw my lunch, he wanted one made for him. Which I did because I'm a nice wife. :)

Lunch 2:
Grilled chicken wrap with a guacamole spread, taco dip, and crackers.

Lunch challenge

Today I start my lunch challenge. My coworkers and I go out lunch nearly almost everyday (mon-fri) to lunch. It's so expensive and not to mention unhealthy. I know better and know that I should order healthy food but I don't. I am at my heaviest weight (a lot) and this is one of the many reasons why..so I am challenging my self to start bringing my own lunches to work.

Day 1:
Crab stuffed mushrooms, zucchini, cheddar cheese, and crackers.

Movie night

What a great way to end a Saturday night as a family like movie night. We made popcorn, chips, and don't forget taco dip. This taco dip is so filling you could skip dinner and just have this. Seriously, that's what we did since we ate such a late lunch.

Taco Dip

Ingredients:
1 lbs ground beef (90/10)
1 can refried beans
2 packets of taco seasoning mix (I make my own)
16 oz sour cream
2 cups shredded cheddar cheese
Lettuce (shredded)
1 chopped tomato
1 small white onion (optional)

Direction:
1. Brown the ground beef.
2. Add 1 packet of taco seasoning and 3/4 cup water. Cook until no more liquid. Remove from heat.
3. In a bowl mix 1 packet of taco seasoning and sour cream. Mix well.
4. In a baking dish layer ingredients. Refried beans, ground beef, sour cream mixture, cheese, lettuce, tomatoes, and onions.
5. Serve warm or cold with chips.

Blake is always mad

Our almost 2 year old Blake is a stinker. He now greets people with a constant scowl. We decided we all show your our Blake face or mad face. Lol!

Old toys never die

Last week Spencer hurt his achilles tendon at soccer. Poor kid missed out on a big tournament too. He was pretty bummed. He had to get X-rays and get stuck in a hard walking boot for a while.

A new home for a pool

A week ago we had a bad storm which blew everything around. A kiddie pool landed in our backyard. We left it in the backyard for 4 days hoping the owners would come and get it. No luck. Then we went and asked the 5 neighbors surround us and no luck. As of now, we own a kiddie pool. The kids played in it this weekend. We will give it back if anyone wants to claim it as theirs. :)

Yum yum....

Someone got into my breakfast smoothie.....

Kickin it up for breakfast

If you love a little kick of spice in your food, then try this in the mornings. We love it in our family but we eat spicy foods all the time.

Breakfast Sandwich:
3 beaten eggs
1 Roma tomato, chopped
1/2 jalapeño (steam & seeds removed), chopped
2 English muffins
Butter
Shredded cheese (I prefer sharp cheddar)

Direction:
1. Place your eggs in the pan and add tomato and jalapeño. Cook on medium heat. Flip once egg is firm enough that it flips all at once.
2. Toast your English muffin. Butter ounces it's done being toasted.
3. Place egg on top of English muffin. I usually cut mine in 4th then place 2 pieces right on top each other to fit onto English muffin. Top with cheeses. I add hot sauce too but no need.

Chicken Parmesan in the slow cooker

Can you believe you can make chicken parmesan in the slow cooker and it still taste good? I couldn't believe it until I tried it for the first time.

Chicken Parmesan
4 boneless skinless chicken breast
1/2 cup of garlic & savory spice bread crumbs (I use Contadina brand)
1/4 Parmesan cheese
1/4 tsp black pepper
1/4 tsp sea salt
1 tbsp olive oil
1 egg beaten
Shredded Italian blend cheese
1 jar/can of marinara sauce

Direction:
1. Spread olive oil on the bottom of your slow cooker.
2. Beat egg in bowl and set aside.
3. Mix bread crumbs, parmesan cheese, salt, and pepper together in bowl.
4. Dry off chicken then dip in egg next into bread crumbs. Coat well.
5. Place on bottom of the slow cooker and repeat.
6. Once all the chicken is in the slow cooker top with Italian cheese. Use as much as you want.
7. Cover chicken and cheese with marina sauce. Cook on low for 6-7 hours. Serve over spaghetti noodles.

Sorry it's been so long

Soccer season will be coming to a close in about 3 weeks so hopefully I'll be around more to blog again. :) I do have two recipes for you. One will be easy crockpot chicken Parmesan and the other is a breakfast sandwich.
